More benefits from Coconut Oil

I am so glad to see more information and healthy experiences coming from using Coconut Oil.  As stated in this video make sure it is pure. Scientists now report it is helpful for Cholesterol, Alzheimer’s, epilepsy, Parkinson’s, a natural antibiotic and other issues. I wrote earlier this week in a blog it is also a healthy fat aiding in weight management.

 

Coconut great addition to food plan

Since January 16th I have been part of a Paleo Challenge with CrossFit Vero Beach. I eat according to the Paleo diet but had been giving myself way too many treats over the holiday.  It was time to record what I was eating everyday, discover new, healthy alternatives for a snack and get creative with my meals.  Coconut has been one of the best foods added into my meal plans.  I bought a coconut and sliced it up. Now I munch on Coconut meat. It fills me up and has so many  nutritional benefits.  I am cooking in coconut oil as well. Joseph Mercola, D.O. says coconut oil is the healthiest oil you can use. The weight and inches I put on over the holidays are coming off. My clothes fit so much better.

Recording my meals each day has brought awareness to  how often I was eating when I was not hungry, using food as a time filler.  The food log is posted in a forum with other people doing the Paleo Challenge, that is where I heard about Coconut Aminos for the first time. This can be used in recipes in place of soy sauce.

Below is a recipe someone shared on the forum. We had it for  dinner  Wednesday night. It was the first time I sautéed meat in Coconut oil. The meal was delicious and really filling.  I have also been scrambling eggs in Coconut oil.

So my suggestion when losing weight or improving how you eat, see if you can team up with people for support and accountability.

I know, you’re thinking cinnamon and beef? This week was all about jumping in with 2 feet for me, so I figured why not try this. This is awesome.
Ingredients 2-3 pounds stew meat, cut into 1-inch cubes sea salt and black pepper 3 tbs coconut oil 1 medium carrot finely chopped 1 medium onion diced 1 medium celery stalk finely chopped 2 cloves garlic minced 2 tbs tomato paste 1/2 cup beef broth 2 tbs balsamic vinegar 3 cups water 2 bay leaves 1 spring or 1/2 tsp dried of rosemary, thyme, sage 2 cinnamon sticks
1. Season beef with salt and pepper. In large pot/Dutch oven head coconut oil and brown beef in batches, don’t over crowd the pan. remove meat once browned
2. In the same pot saute carrot, onion, celery and garlic for 2 min
3. Add tomato paste for 1 min
4. Add broth and vinegar and scrape all the pieces at the bottom of the pot
5. Place meat back in pot. Add 3 cups water, salt and pepper, bay leaves, thyme, sage, rosemary and cinnamon sticks
6. Bring to boil and reduce head. simmer for 90min or until meat tender. Not a soupy stew, but if drys out add beef broth/water

Your Year – Your Choice

This is it,  2012.  What will it be?  The holidays are over, but are the excuses?  I definitely strayed off my path over the holidays.  I am so grateful that I have a health plan, so when I do stray it is not very far.

Diets work, but do not stick.  Having a plan, a lifestyle that matches your values and vision of who you are, raise the success rate.  I love to have energy, think clearly, comfortably fit into my clothes and be free of cravings.  That is path I live on. Time to go back home.

The plan that has worked for me and countless others is choosing high quality protein from shakes or Hormone free meat,  lots of vegetables and some fruit.  Drinking pure water and lots of it is essential as well.

Live presentation

“Living gluten & wheat free- first steps” was presented at Nutrition S’Mart in Pt. St. Lucie, Fl on Saturday. I began the presentation with asking everyone to state  in a few words why they came to this presentation.  All the areas of concern were addressed in my Powerpoint, it was so cool.  Inflammation, weight gain, bad stomach pains, lack of energy, and cravings for gluten and wheat products. There were more but those were some of the most common.

It was so rewarding to be able to have  information for people who have been struggling with irritating to life threatening symptoms with no answers as to what the cause may be. The group supported each other because they could identify with each other and their symptoms. There was a sense of relief that by taking gluten & wheat out of their diets they may be able to lose weight, bring down the inflammation, have symptoms disappear without taking medication just getting creative with their eating choices and taking high quality supplements to heal their bodies. 

The links and books I recommended with recipes and information were greatly appreciated. 

The group understood that if they were ready to give up instant gratification they may be free long-term of annoying aches and pains. They also grasped that healing their bodies was a necessity.  Explaining that I had done years of research before I decided on a high quality brand of vitamins that are gluten & wheat free, and manufactured by  a research and science company that has been a leader in the industry for over 54 years,   gave them reassurance that they did not have to spend time doing the research. They also loved the support and guidance I offer.

Suspicious how gluten and wheat are hurting you?

Last night was the unveiling of my new presentation, “Living gluten and wheat free – First steps”.

When I first accepted how gluten & wheat was devastating my system I looked for guidance on where to start. I had aligned myself with a nurse practitioner who believed in helping the body heal itself through good nutrition, supplements, and clean air. She was very helpful designing a supplement program for me to heal my gut, build my immune system and clear up my skin.  With positive changes occurring as I got off the gluten and wheat, using the program she had me on my moods and energy also  improved dramatically. 

Those are all areas I touch on in the presentation. I love being a resource and guide for people as they are maneuvering through the gluten-free world. 

As I was writing the presentation I stumbled on information I did not know.  Like, in people with first-degree symptoms who are celiac(parent,child,sibling) 1 in 56.

In people with second-degree relatives(aunt,uncle,cousin)who are celiac: 1 in 39.

Celiac disease affects at least 3 million Americans. *The University of Chicago Celiac Disease Center.

A study in the Journal of the American Medical Association showed:

39% increased risk of death in those with Celiac Disease

72% increased risk in those with gut inflammation related to gluten.

35% increased risk in those with gluten sensitivity but no Celiac Disease.

I am hoping that other people will learn new facts about how Celiac and gluten sensitivity affects large numbers of people, the seriousness of the issue and the simple cure, get off gluten and wheat, start healing your body, and get support.

What a wonderful opportunity to be a guest on “Straight Talk Live with Tonja Walker.”  It is an online radio show.  The more .I can be a resource to people suffering with IBS, reflux, diarrhea, constipation, ADD/ADHD, weight gain, weight loss, headaches, depression the list goes on, the sooner those people may get relief like I did.
