Why do I keep doing it? Emotional stress has been an excuse I have been using. Actually it only adds to the stress. Yes, I get about a minute of pure satisfaction but that’s it.  Some can eat gluten-free grains, I cannot without repercussions. 

WIlliam Davis, MD asks in “Wheat Belly Cookbook” why not eat all the nonwheat grains you want? If they don’t cause appetite stimulation, behavioral outbursts in children, addictive consumption of foods, skin rashes, dementia, etc. why not just eat them willly-nilly?  Because they still increase blood sugar and insulin. Page 44

That is why I can’t eat gluten-free grains. I overeat, I get depressed, and have less patience, not good and not like me.

The way out for me is praying for help, releasing whatever the emotional stress was through talking with others, going to Crossfit , playing tennis and eating a paleo diet.

Raw Chocolate Pudding

Must serve to finicky adults or kids before revealing ingredients!


Raw Chocolate Pudding (Paleo)


1 Avocado

1/4 cup cacao powder

1/4 cup agave

6 medjool dates

1/8 tsp. cinnamon

Soak dates in cool water for 30 minutes to soften

Mix dates and avocado in processor or blender until dates and avocado are mixed together without lumps from dates.

Put in bowl with ingredients and mix together.  Serve immediately or chill.

*Avocados help lower cholesterol. Loaded with potassium which helps regulate blood pressure. Helps lower risk of cardiovascular disease. Higher in potassium than a medium banana.

*Dates are little gems of fat, cholesterol free and low in sodium. Works wonders for energy, rich in potassium which helps regulate the central nervous system and low in calories.

Holiday season gluten-free recipes

Everyone focuses on the big meal, Thanksgiving. What about the other meals when your family or friends are visiting? Below are 2 different versions of one of my favorite meals, Paleo Pad Thai, plus other yummy gluten-free recipes.

Paleo Pad Thai


2tbs lime juice
1 clove garlic minced
1/2tsp pepper flakes
1 tbs coconut aminos/low sodium Tamari
1/4 tsp powdered ginger
1/2tsp rice vinegar
1/4 cup sunflower seed butter (no sugar)
dash cayenne pepper
1/4 cup coconut milk

1. Mix all ingredients well

1 batch Sunshine Sauce
2 large eggs
2 tsp coconut aminos/Tamari
2 tsp plus 1 tsp coconut oil
1/2 medium onion thin sliced
1 Chinese Cabbage ( they suggest snap peas, but I substituted since it’s not allowed)
2 cups roasted spaghetti Squash (I didn’t have any, it still tasted delicious without)
toasted cashews

1.Beat egg and Tamari. Heat large pan with coconut oil. The egg needs to be thin. Cook and cut into thin strips

2. Using same pan, head coconut oil. Saute onion and cabbage about 2 min. Add spaghetti squash. OPTION-add cooked chicken or shrimp

3. Add Sunshine Sauce, and Toasted cashews

Pina Colada CINCH Shake:


2 scoops or 1 packet CINCH Vanilla Shake Mix

1/2 C almond milk

4 oz. fresh, chopped pineapple

1/2 tsp. coconut extract

4-6 ice cubes


Combine all ingredients in blender and blend until creamy.

Wheat, weight gain & inflammation

Bloating, inflammation, aches, pains and an unpredictable gut, that was me years ago. I was truly indulging in foods that were slowly killing me and keeping unwanted pounds on.

This past weekend I visited dear friends and colleagues on their 70 acre horse farm in Virginia. Our host decided to cook all gluten-free so I could enjoy her cooking as well as the other guests. What a learning experience that was for her. She was shocked at how good the food was, all the recipes were delicious, easy and full of protein.  Everyone loved the meals she cooked.

Wheat is not the healthy grain our ancestors enjoyed.  In  William Davis, MD’s book Wheat Belly he states,that wheat has been genetically altered to provide processed-food manufacturers the greatest yield at the lowest cost. That means the wheat is nutritionally bankrupt and will cause blood sugar to spike more rapidly than eating pure table sugar and has addictive properties that cause us to ride a roller coaster of hunger, overeating and fatigue.

I love having protein, vegetables and or fruit with each meal. I am full for  4 hours (which is amazing since I have low blood sugar) My protein is either an organic source of meat or Shaklee CINCH protein meal replacement.

I am calling out to you. The person who craves breads and sugar products. Whose blood sugar rises and falls fast. Take one month and use our CINCH plan or organic meats, products to hold off the cravings in a healthy way, record your results and share them with us.  The two sites below have been helpful to others who have chosen to lose weight safely and get rid of the inflammation in their bodies. Image

New Gluten-free app

This app was just recommended to me. Really cool way to quickly find restaurants and dishes they serve that are gluten-free.

I have been to Ireland, on a ship and traveled up and down the east coast successfully enjoying gluten-free dishes. Now I don’t have to guess or ask the waiter a million questions before ordering. I will know which restaurants are knowledgeable and specialize in serving gluten-free food.

Calcium without milk

This morning I was speaking with a Mom of 3 who wants to give her kids good sources of calcium and did not know where to find them.  She understands that milk  and pasteurized dairy products have lost most of their benefits and deliver very little calcium.
